  • Egg Roll Wraps
  • Peaches
  • White Granulated Sugar
  • Water

  • Vanilla Extract

How to Make Peach Cobbler Egg Rolls

  1. First, start by peeling your fresh peaches. On a cutting board, slice and dice your peaches.
  2. In a small bowl, add corn starch and water. Mix with a whisk to break up any lumps.
  3. Next, in a sauce pan over medium heat, add in your diced peaches, white granulated sugar, the water mixed with corn starch and lemon juice. Stir throughout the process and cook until your peach mixture thickens. Remove from the heat and add in the vanilla extract.
  4. Beat your egg in a small bowl.
  5. Next, melt your butter in a microwave safe bowl.
  6. In a separate bowl, prepare your cinnamon sugar by adding the brown sugar and cinnamon to the bowl and mixing well.
  7. Prepare your egg roll wrap. Add 2 tbsp of the peach mixture into 1 egg roll wrap right in the center. Brush the beaten egg on the corners of the egg roll wraps to ensure your egg rolls seal well. Fold the egg roll wrap according to the instructions on the package.
  8. Next, dip your finished egg rolls into the melted butter first. Then, immediately roll them into your sugar and cinnamon mixture making sure to coat them completely.
  9. Place your peach cobbler egg rolls on a parchment paper lined baking sheet. Bake in a preheated 400 degrees F oven for 20 minutes or until golden brown, flipping them over half way.
  10. Top them off with homemade vanilla icing and powdered sugar if desired.

How to Make Homemade Vanilla Icing

  1. In a sauce pan over medium heat, combine the confectioner’s sugar, milk and vanilla extract.
  2. Stir for 1-2 minutes or until well combined.
  3. Drizzle your homemade vanilla icing over your peach cobbler egg rolls.

What Is The Easiest Way To Peel Fresh Peaches?

  1. First, start off by boiling a large pot of water. Once the water has reached a boil, reduce the heat to low and wait for the water to simmer.
  2. Make sure you prepare an ice bath ahead of time. Add 3-4 cups of ice cubes to a large bowl with cold water.
  3. Next, add your peaches to the hot water for only 30-45 seconds.
  4. Remove from the hot water and immediately place into the cold water bath. Use your fingers to easily peel the skin off of your fresh peaches.

  • You may use canned peaches if you cannot find fresh peaches or just don’t have them on hand. If using canned peaches, I recommend omitting the sugar and water from the recipe.
  • These are best served warm topped off with the homemade vanilla icing recipe I included, as well as powdered sugar if desired. I love enjoying them with a hot cup of coffee or tea.
