Last weekend, we were in Boston visiting some family when I discovered an awesome new recipe that I had to share with you. It is making chicken kabobs with Tzatziki sauce. Since it has been raining non-stop here,Chicken Kabobs in the Oven rather than on the BBQ outside.

Cooking in the oven is an essential part of how I cook for my family. It is an easy way to set the timer and work on other things around the house. It does not need to be tended to like food cooked on the stove.

Greek Chicken Marinade

I started the process of making the chicken kabobs by cutting them into 1-inch cubes using kitchen shears. Then in a ziplock bag, I added all the greek chicken marinade spices, fresh lemon, and avocado oil. I use this marinade enough that I actually made a spice mix of it that I can use to quickly marinade chicken with greek marinade. The spice mix for the shaker has two teaspoons dried rosemary, two teaspoons Dried Oregano, four teaspoons dried oregano, two teaspoons Fresh Ground Black Pepper,two teaspoonsDried Basil, andtwo teaspoons Dried Thyme.

Greek Chicken Marinade Ingredients

  • 1/2 tsp Dried Rosemary
  • 1 tspDried Oregano
  • 1/2 tsp Dried Dill
  • 1 tspSalt
  • 1/2 tsp Fresh Ground Black Pepper
  • 1/4 Cup Fresh Lemon Juice
  • 1/2 tspDried Basil
  • 1/2 tspDried Thyme
  • 1/4 Cup Avocado Oil
  • 2 Grated Garlic Cloves ~ 1 tbsp
  • 1 Spring Fresh Parsley Diced ~ 1 tsp

Cooking Avocado Oil

I chose to use avocado oil when making these chicken kabobs in the oven since it is stable at high heat. Does your kitchen fill up with smoke when you cook with coconut oil or olive oil.You can avoid smoke and burning your oil by choosing a healthier oil like avocado oil that has a high smoke point of 520 Degrees F. Since we are baking at 450 and 500 degrees F, avocado oil is our best bet.

How to Cook Chicken Kabobs in the Oven

  1. Soak the wooden skewers or use reusable metal skewers for the kabobs.
  2. Cut the chicken breastsinto 1-inch cubes.
  3. Marinade the chicken using the greek chicken marinade ingredients in a ziplock bag for at least an hour.
  4. Cut up your Kabob vegetableslike bell peppers, onions, and tomatoes.
  5. Skewer the veggies based on the types, don’t mix them.
  6. Preheat the oven to 450 Degrees F.
  7. Line a baking sheet with foil and spray with Avocado Oil.
  8. Skewer the chicken and keep the chicken separated by about a 1/2 inch.
  9. Lay all the veggies and chicken skewers on the bakingsheet.
  10. Place the baking sheet on the lower rack for 15 minutes.
  11. Switch the oven to broil on high at 500 Degrees F.
  12. Move thebaking sheet to the upper rack.
  13. Bake for 10 minutes.
  14. Serve with a side of homemadetzatziki sauce.

Vegan Tzatziki Sauce Ingredients

  • 1 Can Full Fat Canned Coconut Milk
  • 1 Lemon Juiced ~ 1/4 Cup Lemon Juice
  • 2 Small Cucumbers peeled, seeded, & cut into 1/4 inch pieces
  • 2 Garlic Cloves, grated ~ 1 Tbsp
  • 3 Tbsp Fresh Dill, chopped

How to Make Tzatziki Sauce

  1. Start by peeling the cucumbers.
  2. Slice in half lengthwise.
  3. Use a spoon to scoop out the seeds.
  4. Cut the cucumber into 1/4 inch pieces.
  5. In a large bowl, pour the full-fat canned coconut milk and mix until smooth.
  6. Juice a full lemon into the bowl. Make sure to use a juicer that keeps the seed from dropping into the sauce. I like this lemon-lime juicer.
  7. Add the diced cucumbers into the mixture.
  8. Grate the garlic clovesusing a microplane.Then, mix it into the sauce.
  9. Using kitchen shears to cut the fresh dill and add into the sauce.
  10. Add the one teaspoon of salt and mix together.
  11. Refrigerate covered for 30 minutes before serving.
